Carob Fudge Balls
5 T Sunflower Seeds
5 T Pumpkin Seeds
Finely grind all seeds in a food processor.
2 T Shredded Coconut, *plus some extra
5 T Carob Powder
½ C Chopped Pecans
½ C Chopped Raisins
¼ C Honey
2-3 T Water
Mix all together in a bowl. And make into ¾” balls and roll in *extra shredded coconut.
Note: Mixture is easier to form into balls if chilled first.

Coconut Chia Blueberry Pudding
1/2 cup chia seeds
2 1/2 cups canned coconut milk (You can also use any nut milk instead of coconut milk)
3 Tbs. Maple Syrup
1 Tbs. vanilla
Add Blueberries according to taste.
Stir all ingredients in a bowl, I like to use a whisk. Allow to chill 4 hours or overnight. Stir again before serving adding more coconut water if too thick. Dust the top with cinnamon or carob powder for garnish.

Create your own rainbow of chia puddings by adding fruit to the coconut milk. Variations: blue - blueberries, red - strawberries, green - kiwis, yellow - mangos, HAVE FUN!
